I am forever going back and fourth between lush white with ability to bleach and darker colors that hide stains but often bleed in wash so have to be washed separately and then look tired.
I prefer using all White. From towel to linen. It’s more dainty.
Have you ever been to a hotel that didn’t have white towels? It would have felt very odd in my opinion. We may not directly compare ourselves to hotels, but our guests (especially in the case of linens) do. I think providing a white towel appears more hygienic even if the practices of cleaning were the same for colored or white.
It is customary for all towels to be white, and I do not see a convincing reason for that, but in general, I prefer them to be one color and consistent with the colors of the room’s decor, so that they are woven and away from personal preferences. I prefer them to be pure Egyptian cotton because it is the best, softest, highest quality of all, and durable. Washing, sterilizing and fumigating without affecting its quality
There are a few very convincing reasons. To a guest, they provide assurance they have been washed and don't have any hidden stains, they can be bleached to kill any bacteria and are widely available on the market for easy replacement and consistency.

I use white towels and gray towels to give guest a choice. When the guest are all guys, the gray towels are usually used most often.
After 10 years of experience white works the best.

I have used white as well as other colors. My guests prefer colors other than white. I've since removed my white towels because they never get back to that sparkly white no matter how I bleach or wash.
I now offer a variety of colors; keeping them in the bathroom for guests to use and replace as needed.
How do you know your guests prefer them?
Consider opting for gray towels instead of white for your Airbnb; they're more durable and don't show stains as easily, saving you money on replacements in the long run. I had to learn the hard way!
