I'm probably asking too much, but.....we currently have one room of our home listed. We have a 2nd bedroom that we would also like to add to the listing. We'd like to be able to rent one room to one party and the other room to another party (I know this would require separate listings), but we'd also like to have the option to rent both bedrooms to the same party at a discounted rate (for example, rent one bedroom for $100 and rent both for $150 or something like that).
Is the above possible on AirBnb? Thank you!

Yes you would need to create three listings:
==>Parent
==>Child 1
==>Child 2
Linking calendars each time one to the other.

In our case, the "parent" would be our entire home (actually, just the 2 bedrooms on the 2nd floor). If someone books the parent listing they are getting both bedrooms, and we would price it accordingly.
Child 1 would be bedroom #1. Someone can rent only bedroom 1.
Child 2 would be bedroom #2. Someone can rent only bedroom 2.
It sounds like I would have to link parent to bedroom 1, and also child to bedroom 2. If someone books the parent, then the individual calendars for both bedroom 1 and bedroom 2 would show as not being available, since they were already booked as part of the parent booking.
If someone books either bedroom 1 or bedroom 2, then those dates would be blocked on the parent calendar since it is not possible to book both bedrooms if one of them is already booked. But, if someone books either bedroom 1 or bedroom 2, it will not block availability on the other bedroom since those calendars are not linked.
Am I understanding this correctly?

Yes - parent listing would need to be linked to bedroom 1 and bedroom 2 and there are three things that spring to mind that you need to consider also:
1°) Are you on IB or request to book? You can make one or more IB and the third one Request to Book to avoid any double bookings or all three on Request to Book until you find your feet which allows you 24hours to accept or refuse a booking request.
2) Don't use the exact location available to guests in your settings to avoid having all three listings stacking on top of each other. You can toggle the location ONLY when you are first setting up your listing and this allows you to move the pin around on the wider location so that the three listings appear close to each other but not stacked. This gives you wider visibility for these three listings.
3) Type of locks on doors will be an important thing to consider so that everyone feels safe

@Joelle43had some great suggestions; especially about Instant Book vs Request to book! I would also suggest turning on Pro Tools and using the multi-calendar to see all the calendars in one place. Having multiple listings for the same property can be a great way to increase profitability, but requires alot of coordination.
Calendars
Just to note, a reservation will block the synced calendars correctly. However, if you want to manually block calendars for your personal use (family staying, etc.), you need to manually block all 3 calendars for it to work correctly.
Marketing
Also, consider marketing strategies. Some Hosts block the child listings on weekends or holidays in order to get the parent listing booked first.
