You actually do need the day before and the day after each booking in order to assure you have enough time to clean before/after guests on a back to back booking.
For Example:
1. John books a stay for check-in May 28th checking out May 30th
2. Three days later Mary books a stay to check in on May 26th with a checkout on May 28th
You now have a same day turnaround as you haven't added a day before/day after each booking on your calendar. Mary can checkout on May 28th and John can check in on May 28th (the same day). That only gives you from time of checkout for Mary until time of Checkin for John to clean on May 28th.
Also, be advised that "day" to Airbnb is NOT 24hrs. A guest can book a stay at 11:59pm today and check-in tomorrow. Most Hosts who want to ensure a full 24hours will set Advance Noticed to 2days and Preparation 1 day before/after to prevent this.
