So I thought maybe by mistake I hit the photo scroll button, so I deliberately got it back to where it should be and refreshed, but no, it's showing the dining area. Why is that?

Yes...this is a known issue with Hosts in the Rooms Category. To resolve, Hosts have had to delete the photo showing as the cover photo, and then choose the photo they want as the cover. Then add back the deleted photo to the listing.
Just a few suggestions on your photos:
Cover Photo
Try re-shooting the bedroom photos from a different angle/corner of the room. I don't recommend brown sheets/linens. Go for white sheets/linens and a pop of color with a throw blanket at the end of the bed.
For now, try this as you cover photo until you can get better photos of the bedroom:

Just to note....other Hosts have mentioned they have to periodically go back and do the same thing to correct the cover photo. Airbnb must have a program that will go through and update the listings again to the cover photo they think you should have.
