Best way to avoid currency conversion fees?

What would be the smart approach, picking the local currency from the place you are trying to book? (for instance, Europe). I thought that way because I have an european debit card with a balance in Euros, and I assume I would be avoiding that currency conversion fee, which I probably couldn't avoid if I were to use another card I have which is issued in the US, right? What would be your recommendations?
