We are struggling with the county on their strict restrictions on number of guests our Airbnb can host. We have a home with over 3000 square feet and three bathrooms. They are trying to pass so the number of 8 guests is down to 6 guests only. Do we have any rights as a property owner?

This situation usually depends on local county regulations, and unfortunately many areas are becoming stricter with short-term rental rules. Even if your home is large enough to accommodate more guests, the county can still impose limits on occupancy for STRs, often based on zoning laws, safety regulations, parking, or neighborhood concerns.
As a property owner, you may still have some options. I would suggest checking the local STR ordinance carefully to understand the exact rule and whether there is any provision for exceptions based on property size, number of bedrooms, or bathrooms. In some places, hosts are also allowed to apply for a variance or special permit.
You could also consider joining or connecting with a local host association or community group, as they often work together to challenge or discuss such regulations with the county authorities. In some cases, hosts collectively raise concerns or request revisions to the rule.
It might also be worth consulting a local real estate or property lawyer who is familiar with short-term rental regulations in your county to understand what rights you may have as a property owner.

Did the county refer to a specifc ordinance (or part of ordinance) to support the restriction? (they should have).
Doing a bit of quick searching, seems the the county must be able to point to one of these:
1. A specific zoning code section limiting occupancy
2. A Conditional Use Permit (CUP) already attached to the property
3. A building/fire code calculation
4. Septic Tank restrictions
Have there been any neighbor complaints such as parking, noise?
You will have to get the specific ordinance they are referring to in their attempt to limit your guest count and how you are violating that in order to challenge it.

If you charge the same for six or eight guests, why not just accept the restriction and appreciate the lessened wear and tear and cleaning etc. The more guests there are, the more work involved.
If you restrict the listing to 6 guests, the booking guest searching for 8 guests will not see the listing appear in search results at all. This means the Host will miss the opportunity to get booked for 8 guests entirely.
