A guest doesn't see a 50% option on paying now and balance later?  Can I change this at my end?

I don't think that hosts set this option.  A simple Google search did provide this article about the Airbnb payment plans: https://news.airbnb.com/airbnb-launches-pay-less-up-front-a-new-flexible-payment-option-for-traveler....

No, as a host you can not change the way guest are paying. The split payment option is offered by Airbnb under certain conditions.  This reservation probably does not meet those conditions.
