If it is incidental, just change the price on the calender for that date.

Otherwise: the basic price you have set is the price per night, so it applies to a 1 night stay. So increase that price and set a discount percentage to a 2 nights (or 3 nights etc. .) stay. Or set a higher cleaning fee, which makes a short stay relative expensive.
