I have underfloor heating in the property I rent out. Is it ok for me to tell my guests when leaving for the day to switch it off untill they get back. Some guests are leaving it on high all day long when it's not necessary and it is extremely costly to run? Please help as I'm unsure how to approach this without upsetting my guests?

Guests probably are used to do this at home also. Nobody wants to waste energy and throw away money.
So you can friendly ask the guest to pay attention to it.
There are also smart devices on the market who maybe can help you in saving energy, ask for advice.

you should add this in your house manual so people are aware before they book. Also if the current person is reasonable they should understand and hopefully be accommodating. This is our first winter hosting and I'm planning on doing the same with guests. Also as @Emiel1 there is a product that lets you control the thermostat remotely it's called Nest. I'm considering it for our cabin. Doing some research now.

But there also "smart' thermostats which can detect if anybody is at home and act accordingly

@Marie637 You can put a small, friendly note by the switch to remind people to turn it off when they’re not using it. I would also mention it when you’re checking guests in.
@Marie637 You can definitely ask them. I always ask my guests to turn everything off, none have been offended, most think it's a given in this day and age. But, in my experience there are always a few who just don't care they leave everything running all day. I think it's definitely worth investing in a remote gadget to monitor usage and turn down/off if need be.
