Hosting outside of Airbnb

The place where I am hosting my property, is mostly going to be inhabited by the older generation I would think. (It's a house amongst a lot of hunting ground) Some of them won't have AirBNB, maybe not even a smart phone. What would anybody recommend on steps to hosting this way?

My husband is in law enforcement and he recommended at minimum to require a Name, DOB, and Driver's License #. Aything else? How would I handle security deposits? If they don't have AirBNB I hardly doubt they would have Venmo or Paypal either.

Just trying to get my place on the market, but was worried about the lack of technology these folks would have. Thanks!
