How do I configure photos to upload so they display fully?

I read that photos should be 1024 x 683 pixels yet when I upload such a size and aspect ration as the first picture it is arbitrarily cropped on two sides and blurred when I review the listing on my laptop. Any idea how I can defeat the "help" which is messing things up?
