How do I temporily hold back deposit whilst I get a quote for how much it'll cost to repair damage?

My guest has accidentally splattered oil over a large area of a wall, which will probably now need to be redecorated.  How do I hold on to her damage deposit (temporarily) whilst I get an estimate for the cost or repairing the damage, without actually making a claim (since I don't know yet how much it will cost).  My guest is happy for me to do this.
