How do i credit a guest after they have booked and paid online?

They have booked and paid, but funds are still with airbnb until they have arrived.  You can issue a refund once you have had the payout.  If you refund now, they could still cancel and you could get short changed.

If they want to shorten their reservation, that can be done using the "change or cancel" option, price will be adjusted according to number of days/nights and the opposite part would have to accept.
