Can you upcharge?

I am wondering if there is a way to up charge customers?  For example can I add a mini bar like it hotels with little bottles of booze and premium snacks with a price list and then charge them after they check out for anything that is consumed?

No, there isn't. 
I operate an honesty bar. They drink, they pay (in cash). 
Haven't been stiffed to date (250+ guests).

Honesty Bar...hmm, I like that.  Those little bottles of booze don't cost much anyway...god idea, thanks!

There are laws for selling alcohol. Check! I am allowed (Australia) to give away bottle of wine etc, but cannot sell it.
