I don't want to charge for infants but I do want to know whether guests are bringing a baby or toddler. I understood that guests had to put this on their booking form so why am I not seeing it? Guests do normally mention this in 'chat' but I want to see it confirmed on the itinerary.

The reason it's not showing may be that the guests haven't selected the number of infants when booking. Some guests may do this as they may be afraid of being declined or they may think "it's just our 18 month old and we'll bring a cot so it doesn't matter if we don't mention it". They sometimes don't think from the host's perspective. They should be up front and select the number of infants when booking.
If they mention it in chat or show up with an infant, not having mentioned it at all, you can change the reservation to include the infant and have them accept the change.

I have it in my House Rules on my listing AND in the confirmation email AND in the check-in email that goes out a week prior to the guest's stay that infants must be included in the reservation. My property insurer expects this, and I imagine that if the infant were not included, it would not be covered by the Host Protection Guarantee. Anyone who knows different, feel free to clarify.
I also learned that I cannot adjust the reservation to add the infant - The 'bot' says that it is 'not necessary' as it gets to stay for free. But then, it is not officially registered - Not good. I have had to enlist Airbnb, have the guest cancel the reservation, then reserve again, adding the infant. A real pain in the a$$. Again, no other booking site handles it this way. Needs to be fixed.
Now, more than a year after your post, it is still a problem! No fix in sight.
I just got off the phone with Airbnb support. The bot (programmed by Airbnb) is still messing with us.
HOSTS NEED TO BE ABLE TO ADD INFANTS TO A RESERVATION VIA A CHANGE RESERVATION REQUEST.
The Airbnb platform is not allowing us to do so. When we attempt to do so, it gets to the point of making the adjustment and has the button to send the request to the guest, but then it displays an error message "Infants aren't counted as guests, so you don't need to change this reservation", and will not send the change request to the guest.
What would it take for reservations to accurately reflect the number of adults, children, and infants we will be hosting?
