Amount of time for change outs.
I only need 1 day after our cabin is booked to clean and set up for the next guests, but the only option is one day before and one day after. Does anyone know if I can change this so it only blocks one day after the stay?

You really do need one day before and after, to ensure you have at least one day to clean between back to back bookings:
Reservation One
Checks in on 4/2 thru 4/5
Reservation Two
Made after reservation one
3/31 checks out 4/2
You now have one guest checking out on 4/2 and one guest checking in on 4/2. This is why you need one day before and one day after each booking blocked to prevent same day turn arounds.
Advance Notice
You might need to take a look at your Advance Notice settings on your calendar as well. One day advance notice is not really 24hrs. A guest can book a stay tonite at 11:59pm and still arrive the next day for check-in.
