My listing was an Airbnb Plus in Los Angeles since the beginning in year 2018 until Airbnb discontinued the program in 2023. ...
How do I turn off Instant Book? I have not a clue how it went on. I am flying out in the morning and would like to change this tonight.
How can I ensure a day is available between bookings?

Instant booking is located in your Listing Editor under YOUR SPACE. Scroll down to the Booking Settings section. Here is a screenshot.

To block a day before and after, you need to go into your listing calendar here and choose the Availability tab and then go to the Preparation Time section.: https://www.airbnb.com/multicalendar/1306574288182606858

Many hosts have mentioned what it seems that you’ve just experienced: That Instant Book has been «turned on», by someone/something other than the host. Or advance notice/preparation time settings being overridden. Or blocked dates opened. Or amenities added/removed.
I haven’t had issues with this myself, but know hosts who have, so I’ve started to regularly check - and screenshot - my settings and calendar. Just in case.
