I’m a new host, I just received my first reservation and I realise that it will be two people instead of 1. The guest modified the dates so I told him that he should modify the number of guests too but he didn’t do it. Should I accept the date modification anyway? I explained him that the price would be the same.

If you don't price per guest, I wouldn't worry about whether the reservation officially states one guest or two @Cristina4025 . For me the important thing is to know how many to expect, so I can make sure there are enough towels and amenities.
There are some hosts who insist that everyone who is coming on the trip, should be added to the reservation. In other words, that they should all have Airbnb profiles and the booker should invite each one of them as official guests on the reservation. I assume it's to have a bit more control over who's coming on the trip. Your guest won't be able to do this if the reservation is for only one guest.
I would say the above is probably more relevant for large, high-risk groups. You're only hosting 2 people and you know that they will be 2 and not 1, so personally I'd be OK with that.

@Cristina4025 Any person who is NOT included in the booking is NOT a registered guest and can be asked to leave as they are trespassing.
IMO, the guest count should be accurate. If a guest tells me that there will be more than 1 guest and their booking is for 1 guest, I will send a modification of the booking showing two (or more) guests and ask the guest to agree to the change. It does not affect the price, as I accept up to 4 guests, but it does allow me to know how many guests are present and will be covered by my STR insurance.
