We've had three guests by now (our minimum is a 28 day stay). On the payouts I notice that for one guest both cleaning and taxes are listed. For another just cleaning, and for the third neither. How can this be? Thank you!

Kindly check the number of nights booked for each reservation since you only offer long-term reservations. Taxes in Utah are only applied for 29 nights or shorter bookings. Kindly check this helpful article for more discussion about it https://www.airbnb.com/help/article/2333
For the cleaning fee, that should apply to all bookings. But, if the cleaning fee was only set after a booking is already confirmed, it will not apply to the existing reservation. If you sent them a special offer, the clearing fee should be added to the total offer amount and it will no longer appear as a separate item on your payout breakdown. If those do not apply to the 3rd booking, reach out to Airbnb Customer Support.
