custom pricing an idiots guide before I go mad!

Looked up custom pricing was told to go to 'length of stay' and edit to start custom pricing.  These options are not there and I can only edit length of stay.  How do I access custom settings.  I thought it might be through the calendar.  Can someone give  me a very simple how to custom price.  A few years ago they removed the possibility for some people - have they done this again.

Please help I am going mad hunting every corner and not getting it.  I want to make school holidays more expensive (yes its a rotten thing to do!!!)
