Hello everyone,
In our weekly community online meetup, we've come up with a fun idea to (attempt to) cook something delicious together...live from the kitchen.
@Kimberly29 and @Clara116 have both mentioned they would be happy to run the session and so I've started this dedicated topic here to enable us to share ideas and recipes for our exciting cook-a-long! Everyone is welcome to take part (even if you haven't attended a meetup before).
To get us started, I think it's useful for us to think of what we need to keep in mind:
Also, we need to decide when we want to do it, so that we can all get the shopping in. So please do share your preference.
Clara, I know you mentioned you have a nice breakfast recipe, would love to hear more about this.

Breakfast Oatmeal Bake

Yummy breakfast strudel with yogurt/syrup/honey – good cold or warmed up
Best if baked in a 9” cast iron skillet (hot) with 1 TBS Butter/Oil
Ingredients:
2 cups Oatmeal (organic) Soak 1 ½ hr – or overnight Cover with water/plus 2 TBS yogurt
2 Large Eggs/ or 3 medium eggs
1 cup Milk
½ cup chopped nuts- pecans, almonds, walnuts
1/3 cup Honey
2 TBS Butter/ Oil
½ tsp. Salt
1 ½ tsp. Baking Powder
2 tsp. Cinnamon
2 tsp. Vanilla Extract
Berries 1-3 cups Blueberry, Raspberry ½ for recipe- ½ for hot skillet before pouring mixture

Oats have to be soaked at least 1 ½ hrs covered in water with 2 TBS Yogurt – also overnight is good
After soaking oats and ready to begin
Preheat Oven 375 with 9” pan/skillet (oil/butter skillet)
Mix all ingredients while oven and skillet heat up
Pull out skillet hot and add some berries to the bottom of pan
Pour the mixture over some berries
Bake 45 mins – check usually takes 55-60 mins.
Rest 15 mins to cool out of oven before serving with butter/syrup/yogurt
Have baked many times and it’s terrific each time! Enjoy, Clara

Seems easy enough....... but the kitchen in my Changwon apartment is really really bare 🤣🤣🤣
I have 1 pot (to cook instant ramyeon), 1 small fry pan (for eggs) and a kettle (that the previous tenant left behind). The End. And no oven. I'm pretty sure most college students living in a dorm are better off than I am.
But I'm fine with watching everyone else cook~~ 😉

Are you still in lockdown guys? If YES keep baking, if NOT go out to spritz aperitifs/restaurants and have some social meeting but keeping phisycal distance.

But I do get your drift.... If we can socialise responsibly, we should. Luckily in Darwin, that is exactly what we are able to do. I imagine our state borders will open in maybe a month with some conditions and some luck, but in the meantime, we are free to move around responsibly. Currently, our state has zero active cases of Covid19 (like New Zealand) and would like to keep it that way. 💐

Will be looking forward to the tortilla cooking social~ I probably won't be able to cook during the week (my Changwon apartment is not equipped for cooking beyond instant noodles 🤣 ) but I will watch and take a few notes and maybe give it a go (or better yet get Henry to give it a go) later on a lazy weekend.
