I have my booking settings set to 3 months but I want to secure dates further down the road to regular customers. Is there a way to offer them a booking date outside of my 3 month window?

You need to open those dates manually on the calender, so the guests can book.

Or sent them a special offer.

Or temporary extend the booking window and set it back to 3 months after reservations have been made.

Just adding a little bit more detail regarding special offers. You will not be able to initiate one on your own.  Have your preferred guests send you an inquiry for the dates they want to book, and then you can respond with a special offer:  https://www.airbnb.com/help/article/35/how-do-i-send-a-guest-a-special-offer.
