How to book a visitor in the 4th month without opening my calendar beyond 3 months

I have a 3 month booking window open and not inclined to open to 6 months at this time. Someone is requesting dates that are still a couple weeks into the blocked calendar. Is there a way to book dates in the blocked window of my calendar if I want to without opening up my entire calender to an additional 3 more months of potential bookings. 

Specifically, right now my rolling 3 month window is open through May 1. Someone wants to book the third week of May. Can I let them without opening my calendar to a 6-month window? Can I send them an offer with their preferred dates even though those dates are not in the open booking window?

@Mead9 You can select the dates they want to book and manually make them available. They can then send a request.
