I just received a booking for over New Years and also just found out I will be out of the country during that time.  Should I cancel?

@Christina1432 Do you have a co-host or trusted friend who could handle the arrival and departure of this guest?  If not, then yes, cancel the booking and block any dates on your calendar where you are not available as a host.
