minimum stay for peak different to off peak

With Summer holidays coming around quickly I wish to make the minim booking period for Jan 7 nights but even if I put in the specific dates in the pricing calander It changes all dates to 7 nights.

Hard to debug without access to your account but I successfully do this all the time by setting seasonal rates. If your doing what is described in the guide on the community help forum the I would contact Airbnb.
