changing the service charge percentage

i understand it is possible to change the percentage of service charge charged to the guest, and the host make up the difference. Is this true and if so, how can one change it?

You can not change the Guest Service fee. Some professional parties like Hotels are allowed to have the Guest Service Fee included in their rating (fixed percentage), called Host-only fee.
