Can someone tell me, please, if is possible to set a security deposit for specific period, for example for a New Year?

No, you cannot add a security deposit for a particular reservation.  If you add a security deposit to your listing today, it will be for every reservation made after this time.  

There is no down-side to adding a security deposit, it actually protects you all the time.
