How can I get my visitors IDs for tax reasons?

I need to get my visitors IDs in order to submit my Airbnb earnings to the tax authorities (mantadory for Greece).

Can I get the IDs from Airbnb or do I need to contact back all my visitors to get their ID?

Airbnb is not going to provide this information.  You can try contacting them one-by-one,  but they may also be a little reluctant to provide.
