We have a final payment for our holiday due on 02 Dec. Are we able to extend final payment until 05 December.

You'll have to contact Airbnb's customer service to see if they are willing to do that as they are the ones who handle payments not the host.

As discussed, If the second payment of your payment plan doesn’t go through, we’ll let you know and ask you to make the second payment right away. If you’re unable to complete the second payment within 72 hours, your reservation will be canceled—any refund for the first payment will be determined by the cancellation policy for your reservation.

I don't believe you can @Heather2218 if you don't pay the final instalment on time I believe you are at risk of Airbnb cancelling your booking .
