I have November set with a 2 night minimum. December is set with a 30 night minimum.
A guest is able to book as many days as they want in December (30 night min) as long as their reservation starts in November (2 night min).
I just had this happen and so far airbnb support isn't being helpful at all. A guest booked the last day of November with a 2 night minimum into the first week of December with a 30 night minimum. I tested it myself with Rule Sets and also Custom Trip Lengths. The first day of your reservation is all that matters in terms of minimum night stays.
Has anyone else had this happen?

I am not quite sure if it 100% touches the question you are asking, but thought of sharing it anyway in case it helps with a different idea?

I’d set the 30 day minimum to the last two days of November as well.

This has been an issue for other Hosts as well. If the reservation "touches" outside your restriction, the booking can still take place (if you are on Instant Book).
Per @Judy983 , you could include the last dates of November in your 30day min stay. Another option is to create a specific Rule set limiting check-in/check-out days for the last dates in November. This would prevent someone from booking into your protected 30-day stay for December.
Perhaps another host can chime in here if they have figured out another way to do this?
