If my place sleeps 8, are guests allind to bring additional guests in during the day? I'm afraid 8 can turn into 20 real quick. What are my options if that is proven true by my neighbors and/it Ring Cam?

Be clear in your House Rules this is not allowed. There is a differentiation between 'authorised guests' and 'unauthorised guests', make it known in your rules that you do not allow unauthorised guests and state how these will be dealt with. Your amenities are not a free for all for an undisclosed number - and you're right - very soon there can be 20 in your place.
@Ryan1980 Put in your house rules that only guests who are part of the reservation are allowed on the property without your knowledge and permission. It is also good to remind guests of this rule if your house is the type that attracts party people.
