I have a renter that wanted to do a partial payment but accidentally put full payment. Is there any way to change that other than for them to cancel the reservation and rebook?

The payment method cannot be changed after the reservation has been made. If the guest just made the reservation, depending upon your chosen cancellation policy they should be able to get a full refund. Please note that the payment plan option isn't available for long-term stays: https://www.airbnb.com/help/article/2143/payment-plans
