Hello,
Are there any locations in the London area or across the UK where you struggle to meet customer demand? I am considering making some of my properties available for Airbnb use. For this reason, do you have any information on areas that are frequently in demand for accommodations or where you’ve noticed difficulty in meeting the requests of customers looking to use Airbnb services? Do you share such data?

That's quite an exciting project!

Whereabouts in London are your properties located? You could try searching in those areas to see where calendars are full;  that could give you an inkling as to where demand is high. You could also explore other market research avenues. 🙂
