Hello, 

I am the property owner looking to engage a HOST to manage all bookings, cleaning etc. 

Would anyone have any advice on legal documentation we should use? I'm wondering if Airbnb have a template we can use?

@Christina1687 Airbnb does not have a template. The best advice I can give is to ensure the agreement is clear as to what happens when the management relationship ends. Ideally you should be the host and the manager the co host. That way if you change managers you do not lose all the bookings and reviews built up to that point.
