Without going into specifics, I have given the person I co-host for several months notice that I would no longer be available to co-host after the first of the year. This person continues to ask me to jump in and cover for them - saying they won't be able to train a new person for several more weeks. Is there a way for me to remove myself from their account as co-host?

The host (Elie) needs to remove you from his listings as you being his co-host.
Then it is also clear to everybody your co-hosting stops from that moment on..
I noticed your profile shows 3 listings, 1 of them is owned by yourself, which you probably want to continue hosting with
So there seems to be another solution:
Remove yourself as a co-host from the 2 listings owned by Elie, as described here:

Oh dear - yes I agree with @Emiel1 .
You've given him several months notice so not your responsibility. Particularly as you've now given him an additional three weeks .
just remove yourself from the listings and confirm in line with your contract you've given him two months notice and an additional three weeks, and won't be available to support him going forward . Then you're free to ignore any further requests.
