Have any hosts in Scotland gone through the process of applying for a licence? If so, how did it go and how much did it cost?

It went fine. But I applied almost a year ago. It's now just a few weeks till the application deadline, so you haven't left yourself much time to get available trades, who are very busy with all the last-minute applications. The cost is different in each region.

The cost varies between local authorities - when you downloaded the guidance from your council it will have given you the costs.

I'm afraid it's very late in the day to be applying for a license so this may impact on your ability to carry on hosting until the license comes through.
