How do you handle when a guest stayed in your listing for the entire stay, nearly 2 months, and then asks for a full refund after they left stating it wasn't clean enough? Especially when i checked in with them frequently and every time they said everything was fine?

Just confirm to the guest that if the listing was not clean on check in they had up to 72 hours to report this . If they had then provided evidence the listing was not clean you would have sent the cleaners back in to re clean. They didn't do this
they didn't not report any issues at all during their whole two month stay . On the contrary on the regular occasions you checked in with them they told you everything was fine.
you are therefore shocked that they would demand a full refund when they stayed for two full months without complaint and you are denying their claim.

@Arti6490. Some great advice here from @Helen3
Going forward for a 2 month stay you really need a pre stay condition report, signed by both host and guest with time stamped pics and a video prior to their arrival imo. None of this is part of the standard Airbnb booking procedures so you need to protect yourself.
Oh, and get a separate bond of one month rental up front just in case they also fail to pay the second month.
As you cant do any of this easily through Airbnb unless you use a channel manager I choose to do longer listings outside Airbnb. Some platforms allow you to select damage bond amounts and upload your own agreements easily.
