If I’m staying Monday-Thursday night and leaving Friday morning do I book exactly for Monday-Friday or Monday-Thursday +1?

You click the date you will arrive (when you will have access from the check-in time) and the date you will leave (by the check-out time). 

Arrive Monday afternoon, leave Friday morning: the charge is for 4 nights and this will show in your price breakdown (xxx times 4 nights).

@Paul11764 if you leave on Friday morning, you should book till Friday because usually checkouts are during the mornings (~~8am - 1pm).
