my booking was cancelled 2 days into my 30 day stay, citing the reason that Airbnb will not pay her until later in the month and that and every place available is significantly more expensive, I was offered a full refund but I am still not able to afford a new place because it’s so much more expensive then when I booked, especially considering I’m already in the city I booked initially and have nowhere to go, is there a way to have my host pay the difference for me to have a new place

It's not clear from your post did your payment not go through or did the host cancel the booking .?
Hosts know they get paid normally within a few days of your stay starting .
if the host cancelled the booking Airbnb should support you under guest cover and may pay some additional costs
