thinking about converting a building to accommodation, what planning requirements are there to consider?

we have a large single storey building within our garden, thinking of converting it into several single unit accommodation, what planning do i need to consider,  is it different with and without a dedicated kitchen, etc any links would be helpful, thanks

It depends on which country you are in @Robert7089  in the UK you would need to contact your local council to apply for planning permission and ensure you meet building regulations. 

yes, in UK.

Existing designation is "garages" and it seems there is a right to convert garage to residential. A host we stayed with last year said the insurance and planning was different depending whether there was a fitted kitchen or not. They offered "continental" breakfast so no cooking or washing up facilities. Understand about building regs, we are converting another part for residential for ourselves.

@Robert7089 All UK planning departments offer advice. There is a difference, I think, if you are effectively creating a new dwelling rather than just extending your house but the planners will know and help you prior to a formal application (if it is needed).

Not correct you still home insurance for short term lets whether the dwelling has a kitchen or not as it's being used for commercial use.

 

Have you looked at the STR legislations currently being consulted on in parliament?
