me and my boyfriend are staying in an AirBnb in Budapest for 2 days. The host reached out to us asking for our dates of birth, passport numbers, and places of birth, among other personal information. Just wondering if this is typical protocol for Hungary? We don't want to supply this information if not necessary, for safety reasons obviously.

Way way too much personal information being asked. I would call support ASAP & ask them. 
I find it hard to think it is a law.

It may be local law. You could do a  search and find out.  

 

I travel extensively all over the world.

 

 I often have to provide a copy of my passport when checking into or booking hotels, especially in Russia, Ukraine, Africa and parts of Asia.
