Calendar - Can't Block Off Dates (Greyed Out)

Hello,

Help needed please.  We're about to go live with our new listing but we aren't able to block any dates on the calendar.  They are greyed out.

I read somewhere to go to Synch Settings and choose one of 2 options - Only Pricing and Availability or Everything. But we can't find "Synch Settings". We'd appreciate someone's help.
