My co-host and I have agreed that they earn a smaller percentage on longer stays, but I don't see a way to adjust that in Airbnb. Is this even possible? If not does anyone have any recommendations?

Cohost payments on Airbnb have only two options. You can only choose a fixed amount per booking or a percentage; you can't base it on length of stay.
Frankly, as a Co Host myself, I would not want to be paid less for a longer booking. After all, my efforts to help make the listing successful are the same, whether it is a long term stay or short term stay. I personally would want to be compensated equally; whether longer term stay or short term stay. Of course, this depends on what tasks the Co-Host is performing. Each situation is different.
However, if you still wish to pay differently for long term stays, you would have to compensate your co-host off-platform in order to do that:

Payouts may be set up for Co-Hosts with any permissions. Some regional limitations may apply based on the Host’s or Co-Host’s location that limit the ability to use this feature.
