How can I push back the payment due date for my renter? Their 2nd payment is due tomorrow and I want to delay the due date by one week.

You shouldn't get involved @Becky681 , and you can't do it from your host dashboard. The guest should contact Support. The guest payment is between the guest and Airbnb, the host payout is between you and Airbnb.
At most, if the guest has trouble contacting Support, you can ask Support to contact the guest regarding a payment issue. Then step back and let them handle it.

Why do you want to delay when your guest pays Airbnb @Becky681 . How will it affect you? You don't get paid until a few days after check in regardless of when the guest makes their second payment .
if you actually means the guest wants to delay payment they will need to contact Airbnb. However Airbnb isn't likely to do this and they risk their booking being cancelled if they don't pay on time.
Hi @Becky681,
Is this something you, or the guest wanted to do?
Either way, in addition to Shelley and Helen's advice, here's more information on 👉 How payments work from the guest perspective
Please let us know how you're getting on, and if you have more questions!
Thanks,
