HI, we restrict children and infants via the Safety setting screen. However, the booking screen doesn't restrict infants. How can we resolve this issue.

I have my listing set up exactly like you Nick and I explain to guests why my listing is not suitable for infants or for children under 12 - safety issues but of course this doesn't stop me getting requests to book from parents under that age limit anyway.
This is frustrating for both hosts and guests and they don't understand why the system throws up my listing if my listing could result in injury for young kids. They are pissed at both me and Airbnb and a very uncomfortable situation to be put in, needlessly in my eyes.
I have obviously read the help link that you have given Shelley, but there is also this one that says that we are allowed for security reasons to exclude children but at the end of the day, it's the guest that has the final say. Great! And if there is accident? Can I be sure that Airbnb will have my back in case of personal injury? I think we all know the answer to that one.

Not all listings are a good fit for kids or even adults and not every listing can be set up as a "one fits all" basis. It's not discrimination but somehow Airbnb make it so and I very much regret that.
I have to systematically double check with guests who is coming and check the age of any children but I know that if a guest insists on coming with their 5 infants, seriously???, kids, I will get hammered by the negative review that will follow. I state that my place is not child proofed in any way and that there is no baby equipment provided but unfortunately, not all guests read the safety part of our listing or our house rules.
Other platforms allow the "no children" I have noticed
Shelley, you're right, some hosts provide small beds for kids but if an adult slept on it, if it didn't break during the night, it would be mighty uncomfortable and the review would reflect that I'm sure.

As far as I know, you've already done your share to list it in the correct section. Some hosts with properties not suitable for infants communicate further with guests once they receive a booking request.

I have never figured this one out.
If the Host chooses not suitable for children, Airbnb greys-out "children" on the initial reservation page, therefore blocking guests from adding children. This seemingly is counter to their non-discrimination policies that @Shelley159 mentions?
However, if the Host chooses not suitable for infants - they don't grey-out infants on the booking screen? They also allow up to 5 infants to be added, even if that goes over your max guest count? 🤔

@Joan2709 I tested @Tenzen-Springs0 's first listing (which is set to no children) I was able to add one adult and one child?
I think it's only when you've already added 2 adults that it greys out children (because the maximum of 2 guests has been reached, and Airbnb counts children as guests).
Infants don't count towards the maximum guest count, so you can always add them at no cost.
I must say the policy can make things difficult from a practical perspective. For example, a bed may be suitable for a child but not for an adult, but due to the policy there's no way to set up your listing that way ...
