I would always leave an extra set of sheets in the space for each bed in a place that the guests know about (you can leave details for location of items and how to use things in the house manual), at least two sets of towels per guest during the stay.
We have a small guest suite for 2 people and it is amazing how many towels some people use. One person who stayed two nights used two sets of towels. Some women use a bath sheet for their body and a bath towel for their hair, some couples share towels, some guests have brought their own towels. For our bathroom with one queen bed and two guests we leave 4 bath sheets, 4 bath towels, 6 hand towels, 8 wash cloths. Some longer term guests have gone through almost of them for a week stay.
I know some guests have marked hosts down for not having enough towels. Airbnb says you must have at least one set of towels per guest and one set of bed linens per bed.
Do you offer laundry in your listing? If you do sometimes guests will launder their towels but you shouldn’t expect them to. If they are a long term stay >28 days then it would be an expectation that they do their own laundry.
