You can do this by creating a rule set and apply it to the desired date(s)
(professional tools must be active)
OR
By creating a "custom trip length" for the desired dates under menu "pricing and availability", section "trip length". You maybe also want to set the checkin-day in same setting
Please note a custom "lenght of stay" is only taken into account if the check-in date is within the time period it is set for. If you do not want a guest can make a booking on earlier dates, flowing into this time period, you need to make additional settings to prevent this.
