I am a host and would like to know if someone can guide me how to obtain tax documentation from Airbnb.

I would suggest to read the TAX information in the HELP file:

You can download CSV files from theTransaction History pages regarding your earnings.

Regarding VAT you can download related invoices, for each reservation or in a batch as CSV or PDF
