I'm new to Airbnb hosting, I havent completed my form quite yet.
I have 2 questions...I'm trying to go back and change my discription and it
doesnt seem to let me do that?
The other question, I stayed at an airbnb in Seattle last winter and I completed
a background check to stay there...But I'm not seeing an option for this for my home.

To change the description you should click on "Host" and then select "Listing". That should show you a page where you can click the "Edit" button in the "Title & description" section just below the photos.
I'm not sure what you mean by having completed a background check. If you mean that you had to upload a photo of an ID document then you have to enable instant book to be able to require that your guests upload one too.
To enable instant book go to your listing page as indicated above and then click on "Booking settings". Then click "Edit" in the "How guests can book" section and select "Guests who meet all your requirements can book instantly ..." option.
Then set the "Government-issued ID" option in the "Guest requirements" section.
Instant book isn't to every hosts taste and hosts often recommend that new hosts avoid it until they have gained some hosting experience. It means that guests can book instantly without you having the opportunity to engage with them and approve the reservation.
