My Chinese host is asking for Passport copies, supposedly to scan the information page for a door password. I don't know how that even works. She has repeatedly asked for the visa and passport copies to 'check us in' and 'apply for password'. Does anyone see anything funny with this?
Not at all. Many countries (including your own) have a legal requirement that hotels, Airbnb and other accommodation owners need to take copies of their guests ID.
Haven't heard the one about visa's before.

I understand the requirement for the ID but I was just curious to know how was the host going to use that to "apply for a door password by scanning it"? The house rules only mention submission of the ID not the visa but the host asked for it anyway. I was only concerned as to how the host was going to use my ID.
You should do as host required or do not come . You should always respect the property you are coming to. Every property is different and never equal . The same as people.
